Our client, an established manufacturer of food products, is recruiting for an experienced Head Pastry Chef. Reporting to the Executive Head Chef your duties will include:

  • Collaborating with the culinary team to develop and create innovative, seasonal, and enticing pastry menus that complement the overall concept of the establishment.
  • Developing and refining recipes for a range of pastries, desserts, and baked goods, ensuring they are consistently high-quality, visually appealing, and delicious.
  • Overseeing the production of pastries and desserts, ensuring proper techniques, portion control, and presentation to meet the establishment's standards.
  • Managing, training, and mentoring a team of pastry cooks, providing guidance and fostering a positive and collaborative work environment.
  • Monitoring inventory levels of pastry ingredients and supplies, and coordinating with the procurement team to ensure timely and efficient ordering.
  • Maintaining a clean, organised, and efficient pastry kitchen, ensuring adherence to food safety and sanitation guidelines.
  • Working within budgetary constraints to optimise ingredient usage and minimising waste, while maintaining the desired level of quality.
  • Collaborating with other kitchen departments to coordinate dessert offerings for special events, catering, and private functions.
  • Staying updated with industry trends, techniques, and new ingredients to continually enhance the pastry offerings.

Working Hours: Monday - Saturday: 0700hrs - 1500hrs (Full Weekends Seasonal)

 

Skill-sets and Requirements
  • Fluency in written and verbal Maltese and English.
  • Proven experience as a Head Pastry Chef with previous experience in Hotels and Food Manufacturing/Production industry is a must.
  • Leadership and team management skills.
  • Strong knowledge of baking techniques, flavour profiles, and dessert presentation.
  • Familiarity with food safety and sanitation regulations.
  • Effective communication and interpersonal skills.
  • Ability to work in a fast-paced and high-pressure kitchen environment.
  • Attention to detail and a commitment to quality.
  • Ability to work independently and as part of a team
  • Creative flair and a passion for developing new pastry recipes.
