Your Mission:

Ensure the seamless operation and profitability of the hotel's Breakfast, Room Dining, and Meetings & Events departments.

Key Responsibilities:

  • Operational Excellence: Guarantee that all F&B areas are run efficiently and align with Melia’s established standards and concept statements.
  • Leadership: Act as the point of contact and lead in the absence of the Food & Beverage Director. Support and collaborate across all business areas as needed.
  • Team Management: Oversee a dedicated team responsible for each area, ensuring accountability for profitability and service standards.
  • Cost Control: Monitor and suggest measures to control costs and adhere to the Department Operational Budget.
  • Productivity: Maintain productivity levels through schedules and immediate corrective actions when necessary.
  • Policy and Procedures: Update and adhere to all SOPs, ensuring alignment with company brand standards.
  • Guest Relations: Handle guest complaints and requests regarding food, beverage, and service, establishing rapport and maintaining excellent customer relationships.
  • Training and Development: Implement training programs and conduct annual PDR for direct reports to ensure the team has the necessary skills and efficiency.

Additional Responsibilities:

  • Uniform and Punctuality: Ensure the team reports punctually in the correct uniform.
  • Health and Safety: Adhere to and enforce policies related to Fire, Hygiene, Health, and Safety.
  • Inventory Management: Conduct bi-annual inventory checks and ensure proper storage and maintenance of equipment.
  • Event Coordination: Oversee banqueting supplies, receive hosts, ensure client satisfaction, and maintain cleanliness before and after events.
  • Customer Care: Foster a culture of exceptional customer care, actively seeking feedback and learning from complaints.
  • Operational Planning: Organize daily operations, including staff schedules, rotas, and smooth shift handovers.
  • Financial Performance: Analyse financial information, forecast potential revenue, control costs, and communicate goals to the team.
  • Staff Development: Select, train, coach, and develop staff to meet current and future needs, ensuring effective recruitment and training.
