Sabi is a new culinary destination and the exciting replacement for Amazonia, located within the prestigious DoubleTree by Hilton Hotel in St Pauls Bay. Sabi encompasses four distinct food and drink outlets, each with its unique concept, aimed at delivering unforgettable culinary experiences to a diverse clientele. From casual to fine dining, each outlet reflects Sabi's dedication to culinary excellence, creativity, and quality. We are seeking an experienced and visionary Executive Head Chef to lead this diverse portfolio.

Job Summary:

The Executive Head Chef will be responsible for overseeing all culinary operations across Sabi's four distinct outlets. This includes menu development, staff leadership, operational efficiency, and ensuring that all dishes reflect the quality and style for which Sabi and the DoubleTree by Hilton brand are known. The ideal candidate will possess a blend of creative flair, a deep understanding of food trends, strong leadership skills, and the ability to manage a diverse range of cuisines and restaurant concepts.

Key Responsibilities:

1. Culinary Vision & Menu Development:

o Develop, curate, and oversee the menus for all four outlets, ensuring each concept is innovative, balanced, and consistent with Sabi's brand and vision.

o Ensure all dishes reflect high standards of presentation, taste, and authenticity across a variety of culinary styles and concepts.

o Regularly refresh menus based on seasonal ingredients, market trends, and guest feedback.

2. Operational Leadership:

o Lead and manage all kitchen staff across the four outlets, ensuring smooth operations, effective communication, and a high-performing team.

o Establish and maintain a culture of teamwork, professionalism, and creativity.

o Coordinate with the General Manager and outlet managers for efficient service and consistency across all restaurant concepts.

3. Food Quality & Safety:

o Uphold the highest standards of quality, hygiene, and food safety in compliance with local regulations and DoubleTree by Hilton’s standards.

o Conduct regular inspections to ensure food quality and preparation meet company standards.

4. Budget & Cost Control:

o Manage food costs and kitchen budgets across all outlets, ensuring profitability while maintaining quality standards.

o Collaborate with procurement teams to source high-quality ingredients, negotiate contracts with suppliers, and maintain inventory levels effectively.

5. Training & Staff Development:

o Recruit, train, mentor, and inspire kitchen staff, promoting growth and talent within the culinary team.

o Develop training programs and implement standard operating procedures (SOPs) for consistency across the outlets.

6. Guest Experience:

o Collaborate closely with the Food & Drink team to understand guest feedback and adapt menus or service styles to exceed guest expectations.

o Occasionally interact with guests to receive feedback and foster a connection between the culinary team and diners.

7. Brand Alignment & Innovation:

o Ensure that all outlets align with the overall branding and quality standards of Sabi and the DoubleTree by Hilton Hotel.

o Remain abreast of industry trends and culinary innovations, ensuring Sabi remains competitive and a dining destination of choice.

Requirements:

• Proven experience as an Executive Head Chef or in a similar leadership role, preferably within a Beach Club or a multi-outlet concept.

• Culinary degree or equivalent experience.

• Strong understanding of a wide range of cuisines, kitchen management, and high-volume service.

• Experience managing multiple food concepts simultaneously is highly desirable.

• Demonstrable passion for quality ingredients, innovation, and sustainable cooking practices.

• Strong leadership skills with the ability to motivate and develop kitchen staff.

• Excellent communication skills, both with staff and front-of-house management.

• Ability to manage budgets, food costs, and inventory effectively.

• Flexibility to work various shifts, including weekends and holidays.
