Job Description
Rosselli AX Privilege in Malta is looking to recruit Breakfast Chefs to join their team on a full/part-time basis. 

Job summary:
This is a unique opportunity to work in a professional environment; in one of the best fine dining venues in Malta, Under Grain, a one Michelin star restaurant that is part of the AX Group Privilege brand. You will be involved not only in the day-to-day operation but in the preparation and delivery of exclusive high-end events with no equivalent on the island.

Responsibilities:

• Preparing and cooking breakfast
• Take control of the breakfast service and ensure guests receive a truly delicious and memorable breakfast
• Ensure that any anticipated shortages are communicated promptly to the Sous Chef or the Head Chef
• Ensure that all dishes are being prepared to the correct recipe and to the correct quantity and served to the specifications set on the menu
• Sett up and clean down the kitchen after breakfast.
• Ensure the kitchen is kept clean and hygienic at all times.
• Ensure all stocks are kept under optimum conditions.
• Ensure all mise-en-place is always freshly prepared and on time.
• Ensure all dishes are being prepared to the correct recipe and to the correct quantity.
• Maintain On Going “Clean as you Go” Practices.
• Take environmentally friendly initiatives
• Be efficient, caring, and friendly in all communications when dealing with guests and colleagues

Requirements:    

• Familiar with HACCP Standards and Health & Safety Regulations as stipulated by law
• A good standard of education, preferably an ITS graduate
• Possess high standards of cooking techniques and be innovative in their working approach
• Able to work on their own initiative
• Willing to work flexible hours
• Has a minimum of 2 years working experience in a similar position
