Malta Marriott Hotel & Spa is currently looking to recruit a Kitchen & Haccp Coordinator to join their team on a full-time basis.

Your main responsibilities will include:

  • Establish, implement and communicate menu recipe standard operation procedures. (SOP's)
  • Order inventory, create, an inventory system for kitchen supplies and work within budget limitations
  • Work closely with the company’s food safety consultant to enforce proper sanitation and preparation practices and procedures by HACCP & Marriott standards as well as local legislation
  • Establish and maintain daily filing of records and make sure HACCP documents are always up to date for both the kitchen and the F&B outlets
  • Ensure all food and beverage and kitchen employees are up to date on required training, including organizing training courses when required
  • Oversee all Food and beverage operations ensuring health and safety work practices, notify respective departments of any repairs or maintenance required for appliances and equipment
  • Review and update menus
  • Arrange various meetings and take minutes
  • Takes the initiative to recommend to his/her manager changes or enhancements in methods or equipment to improve service.

The individual must possess the following knowledge, skills and abilities:

  • Know the food industry & production
  • Have excellent knowledge of MS Office (Word and Excel)
  • Able to work on own initiative, as well as in a team
  • Have excellent communication skills and be fluent in written and spoken English
  • Be organized, methodical and have an eye for detail
  • Must have exceptional organizational skills.
