The Xara Collection currently has a unique opportunity for a Sous Chef to join our award-winning Kitchen team at The Villa.

The group’s diversified portfolio comprises the award-winning fine dining de Mondion perched on Mdina’s bastions, the cosy al fresco Trattoria located in the palace’s courtyard, catering services and the Xara Lodge, an events centre just outside Mdina.

Your Missions:

  • You will assist the Culinary Director & Sous Chef in the menu creation, inventory, orders and stock control, as well as food waste control.
  • As a Junior Sous Chef, you will be required to oversee the main kitchen as well an onsite catering events and to ensure that the quality of the dishes delivered is up to the company’s standards. You will train the new Chefs whilst keeping on developing the current team.
  • You will have a true desire towards producing authentic and beautifully presented dishes that will amaze our guests and oversee the quality and presentation of the food delivered.
  • You will assist in the smooth running of sections in the kitchen and will help promote a professional, hospitable, secure, and friendly working environment.
  • You will assess quality control and adhere to service standards and guide and train the junior members of the team as well as enforce the company’s policy and disciplinary actions when required.

About you…

  • As our ideal candidate, you have a passion for hospitality and attention to detail
  • You have a minimum of 3 years of experience in working in a multi-outlet kitchen operation, strong knowledge of HACCP standards and qualifications in food preparation, culinary arts or equivalent
  • Commitment to teamwork and excellent communicational skills
  • Ability to lead and give directions in the absence of the Sous Chef and to demonstrate flexibility and operate in a changeable environment
  • Ability to produce own work by a deadline and to estimate the daily production needs.
  • Ability to work in various kitchen setups and have the know-how of how to fix last-minute challenges
  • Capable to demonstrate excellent skills in one or more areas ie – fish preparation, butchery, meat and fish cooking or plated food presentation.
  • You have a full awareness of all menu items, their recipes, methods of production and presentation standards 
  • You have flexible working hours subject to the demands of the business
  • You and are computer literate
  • You are the holder of a Trucks/Vans Driving License
