Junior Sous Chef

Rosselli AX Privilege in Malta is looking to recruit a Junior Sous Chef to join their team on a full-time basis.

Job Summary:
Our MICHELIN-starred restaurant Under Grain and recently awarded Grain Street in Merchant Street Valletta, Malta is looking for a Junior Sous Chef. This is a rare chance to join a talented team in which you will be challenged to learn and develop your skills through persistence to achieve perfection. You will be involved in the day-to-day operation and the preparation and delivery of exclusive high-end events with no equivalent on the island.

Responsibilities:

• To deputize in the Executive Chef in his absence and take charge of the kitchen
• To ensure that the necessary stocks are in hand at the right quality and quantity
• To ensure that each dish leaving the kitchen is checked for quality, quantity, presentation, and correct temperature
• To assist and direct in avoiding wastage of food and theft from the kitchen
• To ensure that all communications between restaurant and kitchen run smoothly
• To communicate any special requirements regarding VIP  function
• To ensure that all maintenance problems are reported in a timely manner and followed up
• To ensure all incidents are always logged in a timely manner and brought to the attention of the direct manager
• To delegate workload to subordinates fairly and consistently while continually striving to improve the flow of production.

Requirements: 

• Graduate courses in cooking and HACCP
• Minimum of 3 years of experience in a similar role in a fine dining environment
• Proven track record of leading a team
• Ability to plan, organize and manage kitchen operation
• Ability to provide consistent food quality to the highest standards
• Must be computer literate and able to use Microsoft Office 
• Willingness to work flexible hours including weekends and public holidays.
