Hammett’s Collection is seeking a talented and experienced Head Baker - Pâtissière to lead our bakery team and oversee the production of high-quality bread, pastries, and desserts. This role is ideal for a passionate artisan who excels in both creativity and operational management. The Head Baker - Pâtissière will ensure consistency, innovation, and excellence in every product while maintaining a collaborative and professional kitchen environment. The ideal candidate must actively participate in hands-on kitchen work while also managing administrative duties.

Key Responsibilities:

  • Product Development and Execution:
    • Design and execute a diverse menu of baked goods, pastries, and desserts, ensuring top-tier quality and creativity
    • Develop seasonal offerings and introduce innovative recipes to keep the menu fresh and competitive
    • Oversee the preparation and presentation of all baked items to maintain consistency in taste and appearance
    • Actively work in the kitchen alongside the team to ensure smooth operations and maintain high production standards.
  • Team Leadership and Training:
    • Supervise, train, and mentor the bakery team, fostering a culture of collaboration and excellence
    • Schedule and assign daily tasks to ensure efficient workflow and production
    • Conduct regular performance evaluations and provide constructive feedback.
  • Operations Management:
    • Monitor inventory levels and coordinate with suppliers to ensure the availability of high-quality ingredients
    • Manage the bakery’s budget, including cost control and waste reduction strategies
    • Maintain cleanliness and compliance with health and safety regulations in all areas of the kitchen.
  • Administrative Proficiency:
    • Utilize Microsoft Office Suite (Word, Excel, Outlook, etc.) to manage schedules, inventory, and other administrative tasks
    • Prepare reports and documentation as needed to support operational efficiency.
  • Customer Engagement:
    • Work closely with the management team to understand customer preferences and feedback
    • Collaborate on special orders, events, and catering opportunities
    • Uphold the bakery’s reputation for excellence through exceptional product quality and service.

Qualifications:

  • Proven experience as a Head Baker, Pâtissière, or similar leadership role in a high-volume bakery or pastry kitchen
  • Expertise in baking techniques, pastry arts, and dessert creation
  • Strong knowledge of food safety regulations and best practices
  • Excellent leadership and organizational skills with the ability to manage a diverse team
  • Creative mindset with a passion for innovation in baking and pastry arts
  • Strong communication skills and the ability to work collaboratively with staff and management
  • Proficiency in Microsoft Office Suite (Word, Excel, Outlook, etc.).
