Mallard Co. Ltd in Malta is looking to recruit a Demi Chef De Partie to join their Kitchen Brigade on a full-time basis.

Duties and Responsibilities:

  • Prepare and cook dishes on menus set by the company and Head Chef using recipes provided; 
  • Cook, Chill, Label, Store and rotate food, keeping required records and taking appropriate action where necessary to ensure compliance with HACCP procedures, food hygiene regulations, and company; 
  • Maintain adequate section stock levels to meet the needs of the business and place orders with the Sous Chef; 
  • Maintain secure stock storage; 
  • Minimize expenses by careful control of food stock; 
  • Keep kitchen equipment clean and in good working order; 
  • Report hazards and maintenance requirements; 
  • Provide training and guidance to Commis chef on section; 
  • Maintain up-to-date knowledge of food industry trends.

Requirements and Qualifications:

  • Certificate or Diploma in Food Preparation from a Catering Institute; 
  • In the position of a Food Handling Certificate; 
  • Minimum 3 years work experience in a kitchen, preferably in a hotel; 
  • Fluent in English; 
  • A proactive approach to dealing with issues that may arise; 
  • Highly organized, able to multitask, prioritize, and work under pressure.
