Paradise Bay Resort is seeking a motivated and experienced Assistant Restaurant Manager to support the day-to-day operations of our Porto Lounge Complex, including its restaurants, bars, and beach operations. Working closely with the Porto Lounge Outlet Manager and Food & Beverage Management Team, you will play a key role in delivering exceptional guest experiences, supervising and motivating the team, maintaining high service standards, supporting revenue growth through upselling initiatives, monitoring labour productivity and food & beverage costs, assisting with stock control and inventory management, and ensuring the smooth and efficient operation of all outlets.

Key Responsibilities & Duties:

  • Assist the Porto Lounge Outlet Manager in managing the day-to-day operations of the Porto Lounge Complex, including restaurants, bars, beach operations and all associated food and beverage outlets.
  • Support the delivery of exceptional guest satisfaction through consistently high food, beverage and service standards.
  • Supervise, motivate and support the Porto Lounge operational team, promoting teamwork, accountability and excellent customer service.
  • Coordinate daily outlet operations to ensure efficient service delivery, effective staffing levels and smooth operational flow.
  • Monitor service standards and guest feedback, reporting any issues and assisting in the implementation of corrective actions.
  • Assist in planning and implementing promotional activities, entertainment programmes and seasonal initiatives.
  • Work closely with the Porto Head Chef and Outlet Manager in reviewing menus and improving guest satisfaction and profitability.
  • Promote upselling initiatives and support revenue growth across all Porto Lounge operations.
  • Assist in monitoring labour productivity, payroll efficiency, food cost and beverage cost performance.
  • Support stock control procedures, inventory management, ordering processes and monthly stock takes.

Job Specification:

  • Diploma or Degree in Hospitality Management, Hotel Management or a related discipline.
  • Minimum of four years' experience in food and beverage operations, including at least two years in a supervisory position within a hotel, resort or similar hospitality environment.
  • Strong leadership and people supervision skills.
  • Excellent knowledge of restaurant, bar and beach club operations.
  • Good commercial awareness, including food and beverage cost control and operational efficiency.
  • Strong communication, organisational and problem-solving skills.
  • Working knowledge of HACCP, food safety legislation and occupational health and safety requirements.
  • Proficient in Microsoft Office applications and hotel POS and Hotel Management Systems.
