Food & Beverage Cost Controller
Due to our continued success, the Xara collection is looking for a new Food & Beverage Cost Controller to join our fantastic team.
The group’s diversified portfolio comprises a luxury boutique hotel; The Xara Palace Relais & Châteaux nestled in the walls of Mdina, our One Michelin star and multiple award-winning restaurant de Mondion, the family-friendly Trattoria AD 1530, the chic OKA’s at the Villa, Rosami at The Villa, Xara Catering which is our means of extending the Xara experience beyond our brick and mortar properties, sustainable gurus at Xara Gardens, and last but definitely not least, our exclusive venue The Xara Lodge.

The impact you will make:
As a Food & Beverage Cost controller, you will work collaboratively with various department managers to analyse Food & Beverage costs and maximize profits whilst minimizing waste.
You will be responsible for the short and long-term planning of the Food & Beverage controlling and pricing aspects. You will help maintain a suitable inventory of food and beverage items for the entire collection as well as actively take part in engineering the menu in terms of pricing.
Duties and Responsibilities:
- Effectively controlling the Food & Beverage Cost
- Prepare variance analysis and communicate with relevant parties
- Check and verified voids, discounts and complimentary items in the POS systems
- Check the cost of sales in all F&B outlets and ensure that the costs are within budget
- Check the menu pricing on the POS system and ensure the correct prices are loaded
- Responsible for preparing daily Food & Beverage and monthly cost reports and distributing them to management
- Participate in stock tacking at the outlets
- Coordinate with restaurant management and finance to sort out issues pertaining to Food & Beverage
About you:
- Good verbal and written communication skills
- Good analytics and reporting skills
- Experience with Accounting Systems, POS Systems and cost and inventory systems
- Ability to multitask, and work in a fast-paced environment
- Have high-level attention to detail
- Ability to work independently and to partner with others to promote an environment of teamwork.
