Barceló Fortina Malta is looking for an experienced and passionate Sous Chef to join our culinary team, working alongside Executive Chef Mark Gauci.

Main tasks and responsibilities

  • Support the Executive Chef in the daily management of kitchen operations.
  • Lead and motivate the kitchen team to deliver exceptional food quality and consistency.
  • Ensure compliance with HACCP, food safety, and hygiene standards.
  • Assist with menu planning, stock control, and cost management.
  • Train and develop junior members of the brigade.
  • Maintain high standards across all food outlets and events.


Educational and skill requirements

  • Previous experience as a Sous Chef or an experienced Junior Sous Chef ready for the next step.
  • Experience in a 4 or 5-star hotel or high-volume restaurant.
  • Strong leadership, organisational, and communication skills.
  • Good knowledge of HACCP and food safety standards.
  • A passion for delivering outstanding culinary experiences.
