Paradise Bay Hotel & Resort is looking for an experienced and passionate Head Chef to lead the culinary operations of our beachfront à la carte restaurant.

This is an excellent opportunity for a creative chef with a strong background in seafood cuisine, modern à la carte dining, and high-quality food presentation. The successful candidate will be responsible for leading the kitchen team, creating innovative menus, maintaining exceptional food standards, and delivering outstanding guest experiences.

Key Responsibilities:

  • Lead, supervise, and motivate the entire kitchen brigade to ensure high-quality à la carte service.
  • Develop and update seasonal menus and specials, ensuring creativity, consistency, and brand alignment.
  • Oversee all food preparation, cooking, and plating, maintaining accuracy and refined presentation.
  • Manage food cost, portion control, stock rotation, and wastage.
  • Maintain strong supplier relationships and ensure the availability of high-quality ingredients.
  • Conduct regular staff training to reinforce standards and develop team skills. 
  • Supervise the orders’ flow and coordinate with service staff to ensure efficient à la carte delivery.
  • Maintain strict compliance with hygiene, sanitation, and HACCP requirements.
  • Conduct performance evaluations, support staff development, and address disciplinary issues when required.
  • Prepare staff rosters, ensuring adequate coverage for all service periods in line with operational needs.

Requirements:

  • Minimum 3–5 years' experience as a Head Chef or Senior Sous Chef in a high-quality à la carte restaurant.
  • Excellent knowledge of seafood preparation, fish butchery, shellfish, and modern seafood cooking techniques.
  • Strong experience in menu development, food costing, and kitchen management.
  • Excellent leadership, communication, and organizational skills.
  • Thorough knowledge of HACCP and food safety regulations.
  • Ability to perform under pressure while maintaining the highest culinary standards.
