IBB Hammett's Operations Limited in Malta is currently looking to recruit a Sous Chef to join their team on a full-time basis.

Job Role:
Hammett's Collection is currently seeking an experienced Sous Chef to join our team
The ideal candidate will be responsible for the smooth running of the kitchen, consistency of the brand standards and a high level of performance. 
As part of IBB Hammett's Operations Limited, a distinguished multi-award-winning restaurant franchise, renowned for pioneering multi-cuisine influences within a 'sharing plates concept,' the Sous Chef will contribute to upholding our legacy of excellence in social dining experiences and impeccable service.

Key Responsibilities:

  • Assume leadership of the kitchen team along with the head chef fostering a collaborative and productive work environment
  • Assist the Head Chef to develop new dishes and menus, ensuring alignment with brand standards
  • Provide mentorship and guidance to junior kitchen staff members, overseeing all aspects of food preparation and presentation
  • Manage kitchen stock and ingredients, implementing efficient inventory control measures
  • Enforce food rotation procedures and uphold strict quality assurance standards
  • Facilitate the training of new kitchen employees, ensuring adherence to established restaurant and kitchen protocols
  • Oversee food and product ordering processes, optimizing inventory management and budgetary considerations
  • Coordinate with the Head Chef and restaurant management on supply ordering, budget allocation, kitchen efficiency, and staffing requirements
  • Ensure strict adherence to food hygiene and safety regulations, maintaining a clean and organized kitchen environment.

Key Requirements:

  • Formal culinary training
  • Demonstrated experience of 5+ years in a similar culinary leadership role
  • Extensive food and beverage knowledge
  • Deep understanding of restaurant industry standards and regulations
  • Strong organizational skills and meticulous attention to detail
  • Strong leadership qualities with the ability to effectively manage a kitchen team
  • Proven ability to perform under pressure while maintaining composure and professionalism
  • Self-motivated individual with adept problem-solving skills and a creative approach to culinary challenges
  • Excellent verbal and written communication skills, with a focus on delivering exceptional customer service.
