AX The Palace in Malta is looking to recruit a Sous Chef to join their team on a full-time basis.
Job Summary:
The selected candidate will be responsible to assist the Executive Chef to follow all hotel policies and procedures, oversee and direct all aspects of the kitchen operation and guide the kitchen brigade as needed.
Responsibilities:
Provides functional assistance and direction to the kitchen operation as assigned;
Coordinates functions and activities with the Food and Beverage and Events departments;
Assists the Executive Chef in supervising the functioning of the overall kitchen employees, facilities, and costs to ensure the maximum departmental profit is achieved;
Assists the Executive Chef in controlling and analyzing the quality levels of production and presentation including the staff canteen;
Assists the Executive Chef in controlling and analyzing the cleanliness, sanitation, and hygiene;
Assists the Executive Chef in the production, preparation, and presentation of all food items to ensure the highest quality at all times;
Establishes and maintains effective employee relations and interdepartmental working relationships;
Conducts under the guidance of the Executive Head Chef, such functions as interviewing, hiring, performance appraisal, coaching, counseling, and suspension if necessary to ensure appropriate staffing and productivity;
Assists in liaising with the Purchasing Officer in determining the minimum food par stocks. Ensures the completion of the market list in accordance with quality and quantity standards. Inspects all perishable food items received for quality.
Requirements:
Highly organized and smart in appearance;
Excellent verbal and written communication skills;
Able to manage a team;
Good knowledge of HACCP;
Able to manage costs;
Flexible in hours;
Creative in ideas;
Able to handle the responsibility for the production, preparation, and presentation of all food items and ensure the highest quality at all times;
A minimum of 1-year of experience in a similar position will be considered.
