Reporting to the Head Chef, the selected candidate has to be responsible for the cleanliness and hygiene in the various kitchens and back of house areas, maintaining and improving the productivity, manpower management, and training in order to provide the best possible support the kitchen and F&B department in their tasks.
Your main responsibilities will include:
• Ensure that HACCAP standards are abided to at all times
• Conduct daily sanitation tours through the kitchen
• Control general machine maintenance and ensures follow up with repairs of kitchen equipment
• Conduct regular communication meetings with the stewarding team
• On a daily basis review function sheets ensuring that equipment and supplies are
adequate to meet operational needs
• Set short- and long-term objectives for the department and develop effective plans
for Team Members on how to achieve the objectives
• Composes the weekly working schedule
• Keep strict control on the economic use of detergents and other general storeroom

The individual must possess the following knowledge, skills and abilities:
• Previous experience in a similar supervisory role;
• A strong track record of leading and inspiring the team to deliver the very best in service and standards;
• Has a good knowledge of chemicals;
• A can do attitude, proactive and have a pleasant personality Demonstrates proper and safe usage of all kitchen equipment;
• Ability to spot and resolve problems efficiently;
• Rectify arising problems and complaints;
• Be a team player;
• Flexible with working hours, including evenings and weekends.
