Duties and Responsibilities:
• The efficient daily operation of the overall external catering activities at the designated catering division, including order taking, order processing, production planning, and service.
• Design menus, when required, that enhance customers’ culinary experience while keeping up with the company’s high quality
• Submit cost proposals for food menu items
• Ensure that all food preparation is in accordance with regulatory guidelines
• Monitor inventory levels of commonly used items
• To implement procedures to monitor and minimize food wastage and over-production.
• To liaise with the General Manager and Financial Controller to ensure company business targets are met.
• To ensure that CaterEssence standards of food storage, preparation, processing and presentation in the designated external catering division are always observed and adhered to.
• Perform accounting functions and scheduling of meals to be served
• Manage the rest of the chefs located at external venues, in the chef’s chain of command
• Supervise kitchen personnel and their performance, located at external venues.
• Organize duty roster for kitchen staff required at the external venues
• To liaise, support and participate with HR in the recruitment and interviewing of new staff members to the designated external catering team.
• To ensure that all HACCP documentation, food quality standards and food processing spot checks, are kept up to date and in line with Company procedures.
• To maintain the highest standards of Food Hygiene and adhere with all Health and Safety standards and to the Company’s HACCP system of food safety quality controls.
• To report and take appropriate corrective action to correct any health or safety hazards that expose the Company to food or employee safety risks.
• To ensure CaterEssence operational procedures are in statutory compliance with all local Health and Safety legislation.
• To manage, and report on a regular basis to the Senior Management Team on the quality and operational performance of the designated external catering activity.
• To actively seek new ways to improve operational efficiency within the designated external catering business line operations that can contribute to further long-term operational excellence and cost reductions.
• Any other duties which may crop up from time to time due to the exigencies of the operations.

Established in 2010, CaterEssence operates from a state of the art, central food processing unit spread over 2000 sq. metres at ‘The Landmark’ in Qormi. We operate and specialise in hotel contract catering, care home catering, outside catering and producing a wide variety of delicious pastries. CaterEssence employs +200 dedicated personnel, including over qualified 50 chefs who design, prepare, cook and serve our food and pastries in a various locations around Malta.
