Sous Chef

Job Description
IBB Hammett's Operations Limited in Malta is growing and looking to recruit an organized and experienced Sous Chef to join their team on a full-time basis. The Sous Chef will be responsible for providing first-class dishes, complementing memorable experiences to an esteemed clientele.

Key Responsibilities: 

• Leads kitchen team in the absence of the Head Chef.
• Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating.
• Oversees and organizes kitchen stock and ingredients.
• Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance.
• Keeps cooking stations stocked, especially before and during prime operation hours.
• Hires and trains new kitchen employees to restaurant and kitchen standards.
• Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns.
• Supervises all food preparation and presentation to ensure quality and restaurant standards.
• Assists head chef with menu creation.
• Coordinates with the restaurant management team on supply orders, budget, and kitchen efficiency and staffing.

Key Requirements:

• Formal culinary training.
• At least 3+ years of proven experience in the same and/or similar role.
• Extensive food and beverage knowledge.
• Restaurant industry knowledge and knowledge of restaurant regulations.
• Strong organizational skills and strict attention to detail.
• Superior leadership qualities and managerial abilities.
• Ability to work under pressure.
• Self-motivated and creative problem-solving skills.
• Strong verbal and written communication skills.
• Exceptional customer service skills.
• The necessary qualifications as well as food handling certification.
